AVOPESTO HOLIDAY PARTY DIP
2 cups loosely packed basil leaves
Pulp of 1 large Avo Terra avocado
½ cup extra-virgin olive oil
;⁄; cup cashews
;⁄; cup walnuts
;⁄; cup grated Parmigiano-Reggiano cheese
2 cloves garlic, peeled
Juice of 2 large lemons
¾ teaspoon salt
½ teaspoon black pepper
In the bowl of a food processor, add all ingredients.
Blend together on low for approximately 30 seconds.
Mixture should be creamy but not fully smooth, with
;ecks of basil, nuts and cheese visible. Taste and
adjust seasoning as desired. Makes 8 servings.
Tip: Walnuts and cashews are an economically friendly
alternative to pine nuts. Cashews o;er pine nuts’
richness, while walnuts impart a similarly deep
;avor. AvoPesto can be used as a hearty sauce
for pasta or other grains, meat and/or vegetables.
