KALE SALAD WITH SMOKED
TURKEY & MEDJOOL DATES
3 tablespoons extra virgin olive oil
2 ½ tablespoons lemon juice
2 ½ tablespoons orange juice
¼ teaspoon sea salt
;⁄; cup pitted, coarsely chopped Medjool dates
Freshly ground pepper to taste
2 cups diced smoked turkey
½ cup pitted, coarsely chopped Medjool dates
½ cup coarsely chopped walnuts, toasted
;⁄; cup red onion, peeled and thinly sliced
6 cups torn kale (any variety)
Dressing: Puree all dressing ingredients in a small
blender or food processor until;smooth. Dressing may
be prepared in advance and stored tightly covered in
