2 Eastern Apples, peeled, cored, and halved vertically
4 tablespoons brown sugar, divided
2 ½ tablespoons melted butter, divided
¾ teaspoon ground cinnamon, divided
2 tablespoons old-fashioned rolled oats
1 teaspoon all-purpose ;our
¼ teaspoon salt
Preheat oven 400°F.
Starting at the outermost edges, slice each apple almost
through, at 1/8-inch intervals, leaving about ½-inch at base
unsliced. Coat an 8-inch square baking dish with cooking spray.
Place apple halves, ;at side down, into prepared pan. In a small
bowl, combine 1 tablespoon brown sugar, 1 tablespoon butter,
and ½ teaspoon cinnamon; brush mixture evenly over apple.
Cover pan with foil. Bake for 20 minutes. Remove foil. Bake for
additional 10 minutes or until apples are tender. Remove pan
from oven; cool 10 minutes.
In a small bowl, combine remaining brown sugar, butter, and cinnamon
with the oats, ;our and salt. Fan open apples. Spoon oat mixture over
apples. Bake 10 minutes more. Turn broiler on high and broil apples
2 minutes, until topping is golden and bubbling. Makes 4 servings.
