THE COSTCO CONNECTION
Look for a variety of ingredients to make
homemade chocolate bark at your Costco
warehouse. You’ll also find Costco’s own
delicious chocolate bark in most warehouse bakeries during the holidays.
MOCHA BARK ;
6 ounces milk chocolate, melted
1 tablespoon instant co;ee
Stir together the melted chocolate and the instant
co;ee. Spread onto a parchment-lined rimmed
baking sheet and refrigerate until set. Break into
pieces and store in an airtight container.
Note: For the true co;ee lover, use instant espresso
powder and/or up the amount of instant co;ee to
2 tablespoons. This variation can give the bark bitter
notes, which might not be appreciated by everyone
but will please co;ee ;ends. Makes about 1½ cups
of bark pieces.

RUM RAISIN TOFFEE BARK ;
8 ounces semisweet chocolate, chopped ;ne
4 ounces unsweetened chocolate, chopped ;ne
10 tablespoons butter
1½ cups sugar
½ cup water
½ cup rum
¼ cup honey
2 cups raisins
Mix together the chocolates in a bowl and set aside.
Preheat oven to 325 F. Line a 10-x-15-inch jelly roll
pan with parchment paper.
In a saucepan, melt the butter over medium heat.
Add the sugar, water, rum and honey. Bring to a boil
and heat to 220 F on a candy thermometer. Stir in
the raisins and continue boiling until mixture reaches
225 F. Remove mixture from heat and pour into the
lined jelly roll pan, spreading evenly. Bake in preheated oven for 20 minutes. Remove from oven and
immediately sprinkle mixed chocolate over all. As it
begins to melt, stir everything together until smooth
and uniform. Freeze or refrigerate until hardened. Cut
into bar shapes and store in an airtight container in
the refrigerator. Makes ( 25) 3 x 2 inch-bars.
SWEET AND SALT Y PEANUT BARK ;
1 cup roasted and salted peanuts
½ cup sugar
¼ cup water
2 ounces unsweetened chocolate
2½ ounces semisweet chocolate
Preheat oven to 300 F. Line a rimmed baking sheet
with parchment paper.
Combine peanuts, sugar and water in a saucepan.
Bring to a boil and simmer for 10 minutes. Spread
the mixture into the prepared pan and bake for
15 minutes. Remove from heat and let cool on pan.
After mixture cools, break it apart slightly. In the top
of a double boiler, melt together the chocolate. Pour
the melted chocolate over the peanuts. Refrigerate
until hard. Break into pieces and store in an airtight
container in the refrigerator. Makes approximately
4 cups of bark pieces.
WHITE CHOCOLATE BERRY BARK ;
8 ounces white chocolate
1 tablespoon vegetable oil
4 ounces dried berries (approximately ;⁄; cup)
Melt together the white chocolate and the vegetable
oil. Spread the dried berries on a parchment-covered
rimmed baking sheet. Pour the melted chocolate over
all and spread evenly. Refrigerate until hard. Break
into pieces and store in an airtight container in the
refrigerator. Makes approximately 3 cups of bark pieces.
