CAMPARI® ROASTED CHICKEN
1 pound Campari® tomatoes, plus 8 additional
Campari® tomatoes, divided
1 cup white onion, peeled and ;nely chopped
¼ cup butter, softened
¼ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 4-5 pound whole chicken
Preheat oven to 425°F. Line a rimmed baking sheet
with parchment. Place the pound of tomatoes on
sheet and roast for approximately 15 minutes, or until
softened and bursting. Remove from oven and allow to
cool completely. Transfer to a medium bowl and crush
by hand. Strain, reserving both crushed tomatoes and
liquid. Reduce oven temperature to 375°F.
In a small bowl, combine onions, butter, salt, pepper,
and crushed tomatoes. Place chicken in a shallow
roasting pan. Stu; the mixture under the skin and in
the cavity of the chicken. Bake for 10 minutes, then
lower the temperature to 350°F and bake for 1 hour
more. Baste with reserved tomato liquid as needed.
During last 10 minutes, add remaining whole tomatoes
to the pan. Allow to rest 20 minutes before serving.
