2 eggs, well beaten
1 cup milk
1½ cups all-purpose ;our
3 teaspoons baking
2 teaspoons sugar
½ teaspoon salt
4 ounces Tillamook Sharp
8 slices cooked bacon
Salted butter and real
maple syrup, to serve
Preheat wa;e iron. In a large bowl, whisk
together the eggs, milk and oil. Stir in
;our, baking powder, sugar and salt until
batter is smooth. Stir in shredded cheese.
When wa;e iron is hot, pour in enough
batter to ;ll (amount varies by iron), then
lay a piece of cooked bacon across batter
before closing iron.
Cook according to your iron’s instructions.
Serve immediately with butter and maple
syrup on the side. Makes 8 servings.

Cheddar Bacon Waf;es

Bacon, Cheese and
Green Chili Waf;es
2 large eggs
½ cup milk
¼ cup oil
¼ teaspoon salt
1 4-ounce can chopped
4 slices cooked bacon,
1 cup Kodiak Cakes
Power Cakes ;apjack
and wa;e mix*
1 cup shredded
Diced green onions,
Sour cream, to taste
Preheat wa;e iron according to manufacturer’s
instructions. In a large mixing bowl, whisk
together eggs, milk, oil, salt, green chiles and
chopped bacon. Add Kodiak Cakes ;apjack and
wa;e mix and stir to combine.
Pour about ;⁄; cup batter on preheated wa;e
iron. Sprinkle over about ;⁄; cup of cheese, and
then pour another ;⁄; cup of batter on top of
the cheese. Close the wa;e iron and cook as
directed. Remove the wa;es when they are
crispy and fully cooked.
Top the ;nished wa;es with green onions
and sour cream to taste. Makes 3 to 4 servings.
