FRESH BERRY PIZZA
1 pizza crust (store-bought or homemade)
Flour or cornmeal, for dusting
2 tablespoons unsalted butter, melted
1 16-ounce tub mascarpone cheese,
at room temperature
1 tablespoon fresh lemon juice
2 tablespoons honey
½ teaspoon vanilla extract
¾ cup Alpine Fresh blueberries
½ cup Alpine Fresh blackberries
½ cup Alpine Fresh raspberries
4 tablespoons sweetened condensed milk
Preheat oven to 425 F or as package directs.
Lightly dust a rimless baking pan with ;our or
cornmeal. Place dough on pan and roll out to
about ¼-inch thickness. Brush dough with melted butter.
Bake until golden brown, about 5-10 minutes. Let cool.
Rinse berries in a strainer and let dry. In the bowl of a stand
mixer, combine mascarpone cheese, lemon juice, vanilla
extract and honey. Beat on medium speed until well
combined. Spread cheese mixture over cooled crust.
Top with fresh berries and drizzle with condensed milk.
Makes 8 servings. Additional berries can be added to liking.
