AVOCADO GRILLED BACON, TOMATO,
AND CHEDDAR SANDWICH

8 strips thick-cut bacon
8 slices tomato
½ teaspoon olive oil
Salt and pepper
8 slices thick-cut bread
4 tablespoons soft butter
10 slices extra sharp Cheddar,
two cut in half
1 large avocado, pitted, peeled, thinly sliced
Preheat oven to 400 F. Line a baking sheet
with foil. Lay bacon and tomato on foil.
Drizzle tomato with olive oil and season with
salt and pepper. Bake 10-14 minutes or until
bacon is crisp. Remove from oven, set aside.
Butter bread on one side. In a large nonstick skillet
with lid, place 4 slices bread, buttered side down.
Top each with one slice Cheddar, 2 strips bacon,
½ slice Cheddar, 2 slices tomato, ¼ avocado, Cheddar
slice. Top with remaining bread, buttered side up.
Cover pan and place over medium heat. Cook 3-5 minutes
or until golden. Flip sandwich, cover and cook another
2-4 minutes or until golden and cheese is melted.
