BLUEBERRY-LEMON 4 BOYS
6 cups Townsend Farms fresh blueberries
¾ cup granulated sugar
3 tablespoons cornstarch
3 teaspoons lemon zest, divided
2 tablespoons freshly squeezed lemon juice
1 teaspoon vanilla extract
½ cup all-purpose flour
1⁄ 3 cup packed light brown sugar
1⁄ 3 cup cold butter, diced
¼ cup quick-cooking or old-fashioned oats
Preheat oven to 350 F. Spray an 8-inch square glass
baking dish with nonstick cooking spray.
In a large bowl, stir together blueberries, sugar, cornstarch,
2 teaspoons zest, lemon juice and vanilla. Spoon into
prepared baking dish.
In a medium bowl, mix together flour and brown sugar.
Cut in butter, using a fork or pastry blender, until mixture
is crumbly. Stir in oats and remaining teaspoon lemon zest.
Sprinkle mixture evenly over blueberries.
Bake 50–55 minutes or until filling is bubbly and topping
is golden brown. Serve warm. Makes 6–8 servings.
