PEACH NECTARINE YOGURT PARFAIT
WITH FROZEN ARILS

2 ripe yellow peaches, diced
2 ripe yellow nectarines, diced
1 cup toasted coconut, divided
1 cup granola
2 cups vanilla yogurt
½ cup frozen Juicy Gems pomegranate arils
Fresh mint leaves
In a medium bowl, combine diced peaches and nectarines.
Reserve ¼ cup coconut. In a medium bowl, stir together
remaining coconut and granola.
In each of 4 glass tumblers, spoon ¼ cup vanilla yogurt.
To each glass, add 2 tablespoons of the granola and coconut mixture followed by ¼ cup fruit. Add 1 tablespoon
frozen arils to each glass. Repeat with all ingredients.
Sprinkle reserved coconut over top and garnish with mint.
Makes 4 servings.
