PROTEIN PANCAKE WITH
½ cup quick-cooking oats
4 egg whites
½ teaspoon vanilla extract
1 teaspoon sugar
½ cup sliced Delano Farms Pristine grapes
1 teaspoon maple syrup (optional)
Generously coat a skillet with oil spray and preheat
over medium heat. In a small bowl, whip together oats,
egg whites, vanilla and sugar. Pour the mixture into
the skillet and cook for 2-3 minutes, or until golden
brown, on each side.
Transfer the pancake to a plate. Top with grapes and
drizzle with maple syrup, or toss grapes with syrup.
Makes 1 serving.
Tip: For a moister pancake, cover the skillet with a lid
while the pancake is cooking.
