ORGANIC HONEYCRISP SALSA
2 organic Honeycrisp apples, diced
1½ cups seedless watermelon, diced
¼ cup apple cider vinegar
1 tablespoon lime zest
½ lime, juiced
½ teaspoon salt
¼ teaspoon pepper
½ tablespoon red pepper ;akes
1 handful cilantro, coarsely chopped
AHI TUNA TACOS
2 (4-ounce) ahi tuna steaks
Salt and pepper
1 tablespoon olive oil
1 cup shredded lettuce
6 (6-inch) corn tortillas
In a medium bowl, stir together all
salsa ingredients. Refrigerate for at least
1 hour before using.
Pat tuna dry and liberally season both sides with salt
and pepper. Heat oil in a 12-inch skillet over high heat.
Add tuna and sear, turning ;sh every minute to sear
each edge. Remove from pan and rest 5 minutes.
Slice tuna against the grain, cutting into bite-size pieces.
Warm tortillas in a skillet on medium heat. Divide tuna among tortillas.
Top with shredded lettuce and Honeycrisp salsa. Makes 2-3 servings.
