SWEET KALE SALMON SALAD
1 (28-ounce) package Eat Smart Sweet Kale Salad Kit
12 ounces fresh salmon, cut into 4 (3-ounce) ;llets
1 teaspoon garlic powder
1 lemon, thinly sliced
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup olive oil
2 tablespoons apple cider vinegar
¾ cup grape tomatoes, halved
1 ripe but ;rm avocado, diced
2 tablespoons crumbled goat cheese
Preheat broiler and position oven rack in top slot.
Remove 1 dressing packet from salad kit. Place salmon
;llets on a baking sheet and spread with dressing.
Sprinkle with garlic powder. Place 2 lemon slices on each
;llet. Sprinkle with salt and pepper. Broil salmon until
desired doneness (or until internal temperature is 145 F).
In a small bowl, whisk remaining packet of dressing with
olive oil and vinegar. Place salad greens in large bowl.
Add dressing and cranberry/pumpkin seeds, and toss
well. Stir in tomatoes and avocado.
Divide salad among 4 dinner plates and top with salmon
;llets. Sprinkle with goat cheese. Makes 4 servings.
