1½ lbs. Earthbound Farm Organic Power Greens
2 tablespoons unsalted butter
2 tablespoons all-purpose ;our
1½ cups whole or low-fat milk
½ cup heavy whipping cream
¼ cup freshly grated Parmesan cheese
¼ teaspoon freshly ground nutmeg
Coarse kosher salt, to taste
Freshly ground black pepper, to taste
¼ cup toasted breadcrumbs, optional
Steam greens in a steamer basket over boiling water until
wilted, about 1 minute. Transfer greens to a colander to
drain. Let greens cool. Squeeze out any remaining water
using your hands or wrap greens in a dishcloth and squeeze.
Melt butter in a large skillet over medium-low heat. Add
;our and cook 2 minutes, whisking constantly. Add the milk
and cream in a steady stream, continuing to whisk, and
cook until the sauce thickens, about 2 minutes.
Add greens and stir to combine. Stir in cheese and nutmeg
and cook until the Power Greens are heated through, about
1 minute. Season with salt and pepper to taste. Top with
breadcrumbs, if desired. Makes 4 servings.
