BISTRO APPLE PIZZA
2 teaspoons garlic, minced
2 tablespoons olive oil
1 (12-inch) prepared pizza dough crust
2 cups fresh spinach, chopped
1½ cups Ambrosia apples, unpeeled, thinly sliced
½ cup crumbled blue cheese, divided
¼ cup shredded part-skim mozzarella
½ cup shredded Parmesan cheese
1 teaspoon dried oregano
Heat oven to 450 F. In a small skillet, sauté garlic
in olive oil over medium heat for 1-2 minutes.
Remove from heat. Brush olive oil blend onto
pizza crust. Distribute spinach evenly onto crust.
Lay apple slices over spinach.
Reserve 1 tablespoon blue cheese. Blend remaining blue with mozzarella and Parmesan cheeses.
Distribute cheese mixture evenly over apples.
Sprinkle with oregano. Bake 12-15 minutes
or until cheese bubbles and crust is brown.
Sprinkle on reserved blue cheese as garnish.
Makes 2-4 servings.
