MEDITERRANEAN YOGURT CHICKEN SALAD
4 skinless, boneless chicken breasts
1½ cups plain whole-milk yogurt
1 cup coarsely chopped fresh cilantro
½ large Spanish onion, peeled and coarsely chopped
;⁄; cup olive oil, plus more for brushing
6 garlic cloves, peeled and coarsely chopped
1 tablespoon fresh lime juice
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 piece fresh ginger, peeled and chopped
1 (24-ounce) pack Taylor Farms Organic
Mediterranean Crunch chopped salad kit
Place chicken breasts 1 at a time between 2 sheets
of waxed paper; pound to ½-inch thickness.
Transfer chicken to a resealable plastic bag.
Combine remaining ingredients (except salad kit) in
a food processor. Blend until smooth. Pour yogurt mixture
over chicken, seal bag and turn to coat. Refrigerate
1 hour or overnight.
Preheat grill to medium. Brush grill lightly with olive oil.
Remove chicken from marinade and wipe o; excess.
Grill chicken until completely cooked through (internal
temperature reaches 165 F). Slice and add to
Mediterranean chopped salad. Makes 4 servings.
