HOMEMADE NAVEL ORANGE
2 medium navel oranges, peeled and sectioned
1¾ cups coconut milk
4 tablespoons honey (options: powdered sugar
or maple syrup)
1 teaspoon vanilla extract
Place orange sections on a baking sheet in a
singer layer. Freeze until solid.
In a blender, add coconut milk and half of the
frozen orange sections. Blend until smooth.
Add remaining sections and continue blending.
Add sweetener of choice and vanilla extract.
Blend again. Pour into a freezer-safe ½-gallon
container and freeze until solid.
When ready to serve, remove from freezer and
let sit at room temperature a few minutes to
make scooping easier. Makes 4 servings.
