s you will see in this month’s issue of
the Connection, we at Costco love food.
However, aside from an occasional omelet,
I am unremarkable when it comes to
food preparation. I set out to change that this grilling
season, beginning with steaks on Mother’s Day. The
target was a ; p.m. dinner. Here’s an account.
Day before: Went to Costco, picked up one package of beef rib-eye steaks, asparagus, salad kit and a
pair of men’s walking shorts (strayed from mission).
Day of, ; p.m.: Took steaks out of fridge to bring
to room temp.
; p.m.: Oops, got distracted by yard projects!
Time to preheat the BBQ because you cook steaks hot,
right? Turned the Traeger grill on high. I’ve got this.
;:;; p.m.: Wondered how to prep steaks. Found
two great recipes online for marinating—which
had to be done the night before. Lightbulb: How
about going to the Traeger website for tips?
;:;; p.m.: Traeger says: Do not preheat the
grill. Smoke the meat on cool for ;; to ;; minutes
to impart that heavenly smoky flavor.
;:;; p.m.: Ran out to turn off the Traeger.
;:;; p.m.: Dabbed steaks with olive oil and
sprinkled with salt and pepper. Feeling professional.
;:;; p.m.: Grill is cool enough. Turned knob to
“smoke”; placed steaks on rack.
;:;; p.m.: Per Traeger’s instructions, took steaks
off grill to cool. Turned grill on high to preheat.
Uh-oh, ; p.m. target looks iffy.
;:;; p.m.: Plopped steaks back on the grill.
Inserted meat thermometer in one, programmed to
medium. Oh shoot, forgot about the asparagus. Yelled
in to wife (the subject of the Mother’s Day dinner):
“Honey! Cook the asparagus!”
; p.m.: Dinner is on the table. Steaks look great.
Not very overcooked this time. Asparagus is perfect.
