Add 1 cup of quinoa to 13/4 cups
of boiling water. Cover and simmer
for 15 minutes or until the water
has completely evaporated. Fluff,
add salt to taste and let rest
covered for an additional 5 minutes.
For fluffier, nuttier-tasting quinoa,
lightly roast quinoa in the pan prior
to adding the water.
