2 tablespoons butter or margarine
1 medium onion, chopped
1/3 cup chopped green bell pepper
1/3 cup chopped celery
1 tablespoon minced garlic
1 pound Hillshire Farm Polska Kielbasa, cut in 1-inch slices
(or 1 pound Hillshire Farm Lit’l Smokies)
2 cups chicken broth
1 14 1/2-ounce can tomatoes, diced, drained
1 cup converted rice
1 tablespoon Cajun seasoning
1. Melt butter in a heavy saucepan over high heat. Add onion, bell pepper,
celery and garlic; sauté for 5 minutes.
2. Add kielbasa, chicken broth, tomatoes, rice and Cajun seasoning; mix well
and bring to a boil. Lower heat, cover and simmer for 25 minutes, or until the
rice is cooked.
3. Remove from the heat and let sit, covered, for 5 minutes before fluffing
with a fork. Makes 4-5 servings.
