Sensational Ginger/Honey Salmon
3 ounces sake (Japanese rice wine)
2 tablespoons soy sauce
1 tablespoon finely chopped or julienned fresh ginger
Cracked pepper to taste
4 6-ounce fresh skinless, boneless Camanchaca salmon portions
Honey to taste
Lemon or lime, optional
Lemon slices and parsley sprigs for garnish
1. Preheat broiler.
2. Mix together sake, soy sauce, ginger and cracked pepper; pour into a shallow
casserole dish.
3. Pierce salmon portions with a fork and place in the casserole. Baste salmon
with the marinade; drizzle generously with honey.
4. Place the casserole under the broiler on the top oven rack. Watch closely
until the salmon begins to brown, approximately 3-5 minutes. Remove from
the oven and turn the salmon. Baste with marinade and generously drizzle
with honey. Continue broiling for 3-5 minutes, or until browned.
5. Squeeze a lemon or lime over the salmon if desired. Garnish with lemon
slices and parsley sprigs. Serve with your favorite vegetables or rice.
