Spicy Mango Breakfast Jam
2 cups chopped Philippine Brand dried mangoes
3 cups Philippine Brand mango juice
1/2cup chopped mild onion
2 tablespoons chopped cilantro
1-2 tablespoons seeded, minced serrano or other small chile, optional
1 teaspoon grated lime peel
2 teaspoons lime juice
1/4 teaspoon ground cumin
Peasant bread, thickly sliced and toasted
1. Place dried mangoes in a bowl. Heat mango juice to a boil and pour over
the dried mangoes. Let soak until tender and most of the liquid is absorbed
(1 hour or longer). Strain, retaining leftover juices.
2. Quickly blend mangoes, onion, cilantro, chile, lime peel, lime juice and
cumin in a food processor to make a spicy jam. Drizzle reserved mango juice
on the toasted bread and top with jam. Makes about 3 cups.
