Chinese Chicken Salad
Shred iceberg lettuce for salads or use whole
leaves as wrappers for spring rolls or other
mixtures. Wash and dry gently just before using.
1/2cup red wine vinegar
1 tablespoon dry mustard
1 tablespoon soy sauce
3 tablespoons hoisin sauce
1 tablespoon hot chili oil
1/2cup toasted sesame oil
1/2cup canola oil
4 boneless chicken breasts,
marinated in purchased
teriyaki sauce, grilled and
cut or torn into slivers
1 head Tanimura & Antle
iceberg lettuce,
thinly shredded
1/2cup diagonally
sliced scallions
1/2cup coarsely
chopped cilantro
2 cups fried rice sticks
1/4cup toasted sesame seeds
1/4cup chopped
roasted peanuts
Fresh cilantro sprigs
1. In a mixing bowl, whisk together vinegar,
mustard, soy sauce, hoisin sauce and chili oil.
Slowly drizzle in sesame and canola oils while
continuing to whisk.
2. Toss chicken, lettuce, scallions and cilantro
with the dressing. Garnish with rice sticks,
sesame seeds and peanuts. Top with cilantro
sprigs. Makes 6 servings.
