Apple Dessert Salad
Douglas Fruit, located in the rich agricultural area
of southeastern Washington, has been Costco’s
source of fresh apples for many years. Douglas
Fruit employees have found real enjoyment from
experimenting with newer varieties of apples such
as Braeburn, Fuji, Gala and Pink Lady. This recipe
is a family favorite of Cyndy Ebberson, a Douglas
Fruit employee, who pairs these apples with a
favorite local wine.

bite-sizechunks Muscat,oroff-dry
1freshpear,cutinbite-size Gewürztraminer)
chunks,optional 1/4cupsugar
1cupseedless 2tablespoonsfresh
grapes,optional lemonjuice
1cupdairy sour cream 1/2 to3/4 teaspooncinnamon
1. Combine apple with pear and grapes.
2. Stir together sour cream, wine, sugar, lemon
juice and cinnamon. Toss dressing together
with fruit. Makes 4-8 servings.
Tip: Fruit is best kept chilled. Dressing can
be made a day ahead. It can also be used as
a dip for fruit.

Wilcox Almond Rice Pudding
3/4cuplightbrownsugar 2cupscookedrice
1cupsliced,toastedalmonds 4Wilcox*eggs
1/2cupgoldenraisins 11/2cupsKirklandSignature
Gratedpeelof1lemon milk
1/2teaspooncinnamon 2teaspoonsfresh
lemon juice
1/2teaspoon nutmeg
1 teaspoon almond extract
1/2teaspoon salt
1. Preheat oven to 325°F. Combine sugar, almonds,
raisins, lemon peel, cinnamon, nutmeg and salt.
Stir into rice.
2. Beat eggs; stir in milk, lemon juice and almond
extract. Combine with rice.
3. Pour into a buttered 8-cup baking dish. Bake
for 1 hour, or until set.
4. For individual servings, pour into 8 buttered
ramekins. Bake in a hot-water bath for 30 minutes,
or until set. Serve hot or cold. Makes 8 servings.
