Traffic-Light Smoothie from
Zespri Kiwifruit and the California
Strawberry Commission
2 green kiwifruit
6 tablespoons orange
juice, divided
2 Zespri gold kiwifruit
3/4cup fresh California
strawberries, hulled
1 tablespoon honey,
or to taste
1. Cut green kiwi in half and scoop pulp by
spoonfuls into a blender with 2 tablespoons orange
juice; puree. Pour into 2 glasses. Rinse blender.
2. Cut gold kiwi in half and scoop into the blender
with 3 tablespoons orange juice; puree. Pour
slowly over the back of a spoon on top of the
green puree to form two layers. Rinse blender.
3. Puree strawberries with the remaining tablespoon
of orange juice and the honey. Pour over the gold
puree to form a third layer. Makes 2 servings.
Tip: For a gravity-defying fruit garnish, thread a
slice of kiwi or a strawberry on a bamboo skewer.

The health benefits of soymilk—high in
protein, calcium and iron; low in fat; and
cholesterol-free—are compelling. But actually
consuming it every day is the challenge. It’s
white, sweet and cold. What’s the problem?
Drinking a glass with meals puts some people
off because soymilk is sweeter than plain milk
but not as sweet as chocolate milk. It has a bit
more body than dairy milk. If you love milk and
cookies you can probably make the switch. If
you’re lactose intolerant, you may learn to love
it. But if you’re not a milk drinker, it might seem
impossible to get on the soy bandwagon.
Here are several ideas for including soymilk
where you’ll never notice the difference:
DLatte: heat 1 cup of vanilla soymilk;
stir in 1 teaspoon of instant coffee
DHot cocoa: heat 1 cup of chocolate soymilk
in the microwave for 1-2 minutes and top
with mini-marshmallows
DFrench toast batter or pancake and
waffle mixes
DFruit smoothies and milkshakes
DBlue cheese, cole slaw and ranch-style
salad dressings
DSour cream–based dip for chips
1 cup Kirkland Signature/
Silk Vanilla Soymilk
1/2cup frozen raspberries
1/2cup frozen strawberries
1/2sliced frozen banana
1 teaspoon honey, optional
1. Combine all ingredients in a blender; puree
until smooth and creamy.
2. Pour into glasses and enjoy. Makes 2 servings.
