Ritz-y Broccoli Casserole
3 10-ounce packages 36 Ritz Crackers, coarsely
frozenchoppedbroccoli, crushed,divided
thawed and drained 1/4 cup (1/2 stick) butter or
1/2poundVelveeta margarine,melted
Pasteurized Prepared
Cheese product, cut up
1. Preheat oven to 350°F. Mix broccoli, Velveeta
and half of the crushed crackers in a 3-quart
baking dish until well blended.
2. Mix remaining crushed crackers with butter;
sprinkle over broccoli mixture.
3. Bake for 45 minutes, or until heated through.
Makes 8 servings.
Tip: To quick-thaw frozen broccoli, microwave for
about half the amount of cooking time indicated
on the package.

Linda’s Sweet and
Sour Red Cabbage
This old family recipe is sweet, tart and hearty
eating from the gardens of the German immigrants
who settled in the Cleveland area.
1mediumheadredcabbage, 1/2cupcidervinegar
cored and shredded 1/2 cup sugar
1 teaspoon salt 2 red cooking apples,
1tablespoonbutter unpeeled,diced
1. Combine cabbage, salt, butter, vinegar, sugar
and 1/2 cup cold water in a large pot. Cook,
covered, over medium heat, stirring occasionally,
for 15 minutes.
2. Add apples to cabbage and cook 20 minutes
more, or until cabbage is tender but still crisp.
Adjust vinegar and sugar to taste. Sweeter apples
may require less sugar or more vinegar.
Makes 6 servings.
