Mann’s Lemon Sugar Snap Pea
Salad with Almonds
2 cups sugar snap peas
1/2tablespoon grated
lemon peel
1 tablespoon fresh
lemon juice
1 clove garlic, chopped
1/8teaspoon crushed
red pepper
Pinch of black pepper
1/4teaspoon salt
2 tablespoons olive oil
1/4cup sliced green onion
1/4cup toasted
sliced, almonds
1. Bring 2 quarts of water to a boil. Blanch
sugar snap peas in boiling water for 45 seconds.
Drain and immediately plunge into ice water
for 2 minutes. Drain.
2. Mix lemon peel and juice, garlic, red and
black peppers, and salt; whisk in oil.
3. Toss peas, onions and almonds with dressing.

1 small butter or
Boston lettuce,
torn in 1-inch squares
4 radishes, sliced thin
1 cup shredded
white cabbage
1/4cup sweet corn
2 ounces cream cheese
1/4cup heavy cream
1 tablespoon ketchup
1 teaspoon lemon juice
1 teaspoon paprika
1 teaspoon
Worcestershire sauce
Hot pepper sauce
Salt and pepper
1. Toss lettuce, radishes, cabbage and corn in a
bowl; arrange on two plates.
2. Combine cream cheese, cream and ketchup in a
small bowl and mix with a fork. Add lemon juice,
paprika, Worcestershire sauce and hot pepper
sauce to taste. Adjust the seasonings, adding salt
and pepper to taste. Serve alongside the salad.
