Special Occasion Cuts
Serve something special at home the next
time you have a reason to celebrate. Here are
some suggestions from Charlie Winters and
Doug Holbrook of Costco’s meat department on
making the best use of larger premium cuts, plus
a marinade recipe from Doug’s wife, Sherry:
Pork Tenderloin
DThis cut is endorsed by the American
Heart Association.
DIt’s conveniently packed two tenderloins to
a bag, two bags to a tray, for 4 to 6 pounds of
total weight, which makes 8 to 12 servings.
DUse one bag and freeze one in the
store packaging.
DBake or grill tenderloins to 140°F for the
juiciest results.
Beef Tenderloin
DUse tenderloin ends for stir-fry and bake the
midsection for tender roast beef.
DCut your own premium steaks for grilling.
DRestaurant menus call steaks from the
tenderloin either fillet or filet mignon.
Tri-Tip Roast
DMarinate tri-tip for an extra layer of flavor.
DIt has become well known as the meat
used in fajitas.
DThis well-marbled cut is tender and flavorful.
Sherry Holbrook’s BBQ Tri-Tip Marinade
1/2cup soy
2 tablespoons honey
2 tablespoons white vinegar
21/2 teaspoons garlic powder
11/2 teaspoons powdered or less fresh ginger
3/4cup peanut oil
1/2cup chopped red onion
1/2cup pineapple juice

1. Preheat oven to 375ºF. Place Brawley Beef Prime
Rib in a large roasting pan. Rub oil over entire
prime rib. Combine seasoned salt and pepper; rub
over meat.
2. Cut 1-inch slits all over the meat; insert
garlic slices.
3. Spread sliced onions on top. Bake for 21/2 hours,
or until the internal temperature is 130-140°, for
medium-rare. Makes 15-25 servings.

1. Preheat oven to 350°F. Place ribs, bone side
down, in a shallow baking pan. Cover and
bake 1 hour.
2. In a saucepan, combine remaining ingredients.
Simmer 10 minutes. Brush ribs generously with
sauce. Cover and bake 30 minutes.
3. Brush ribs with sauce and bake, uncovered,
30-60 minutes longer, basting with additional
sauce. Serve with any remaining sauce.
Makes 4 servings.
