Tyson Caramel Apple Pork Chops
4bonelessporkchops, 1/8teaspoongroundmace
3/4 inch thick 1/8 teaspoon ground nutmeg
Vegetableoil 2tablespoonsbutter
2tablespoonsbrownsugar 2tartredapples,coredand
1/4teaspoonsalt slicedinto1/2-inchwedges
1/4teaspoonpepper 3tablespoonschoppedpecans
1. Brush chops lightly with oil and cook in a large
skillet over medium-high heat for 5-6 minutes,
turning occasionally, until evenly browned on
both sides. Remove chops to a serving platter;
keep warm.
2. In a small bowl, combine brown sugar, salt,
pepper, mace and nutmeg. Melt butter in the
skillet over low heat; stir in brown sugar mixture
and apples. Cover and cook for 3-4 minutes,
or until tender. Remove apples and arrange on
top of pork chops.
3. Continue cooking the sauce remaining in the
skillet, uncovered, until it thickens slightly. Spoon
over the apples and chops. Sprinkle with pecans.
Makes 4 servings.

3/4 cup purchased 1/2 teaspoon ground cumin
barbecue sauce 8 Texas toast slices, toasted
3/4cupchilisauce 8baconslices,cookedcrisp
1/2 cup fresh lime juice 1/4 cup chopped onion
1/2cupchoppedcanned 4slicesAmericancheese,
mildgreenchiles eachcutinto2triangles
1/2cupcannedblackbeans, 8cannedpepperoncini
rinsed and drained
1. Combine chicken, barbecue sauce, chili sauce,
lime juice, chiles, beans, chili powder and cumin in
a saucepan and mix thoroughly. Cover and bring to
a boil over medium heat. Reduce heat and simmer
for 2-4 minutes. Remove from heat; keep warm.
2. Arrange 2 slices of toast, slightly overlapping,
on each plate. Top with 2 slices bacon and 1 cup
chicken mixture. Sprinkle with 1 tablespoon onion
and top with 2 cheese triangles and 2 pepperoncini.
Makes 4 servings.

Beef Pot Pie

steak,3/4inchthick 12ouncescanned
Vegetableoilcookingspray mushroomgravy
1/4teaspoonpepper 8ouncesrefrigerated
16ouncesfrozenpotato, crescentrolls
green bean, onion and
red pepper mixture
1. Preheat oven to 375°F. Cut steak lengthwise
into 2 or 3 strips, then crosswise into 1/2
-inch-thick slices. Coat a large ovenproof skillet with
cooking spray and heat over medium-high heat.
Stir-fry steak in batches for 1 minute. Remove
from the skillet and season with pepper.
2. Add vegetable mixture, 2 tablespoons water
and thyme to skillet and cook, stirring, for
3 minutes, or until vegetables are defrosted. Stir
in gravy and bring to a boil. Remove from heat;
return beef to pan.
3. Separate rolls into 8 triangles. Starting at the
wide end, roll up halfway. Arrange rolls on the
beef mixture with pointed ends toward the center.
Bake for 17-19 minutes, or until golden brown.
