Delta Pride Grilled Catfish
with Citrus Marinade
Delta Pride U.S. farm-raised catfish, with its mild
taste and lean, firm flesh, is catching on across
the country. Delta Pride’s fish are raised in clay-bottom ponds filled with pure water from deep
aquifers and fed a grain-based, high-protein diet
to ensure good flavor and a light, even texture.

country with full-time USDA inspectors.

1/4cup orange juice
2 tablespoons soy sauce
1 tablespoon lemon juice
2 tablespoons vegetable oil
1 teaspoon chopped garlic
1/4teaspoon cracked
black pepper
1 tablespoon chopped
fresh parsley
1. Rinse fillets, pat dry and place in a shallow
glass dish.
2. Combine remaining ingredients and pour over
fillets. Chill for 1-3 hours.
3. Grill fillets over high heat for 3-4 minutes on
each side, or until fish flakes easily with a fork or
internal temperature is 145°F. Makes 4 servings.

Tuna Creole
This speedy recipe relies on pantry staples, so
it’s easy to make when you can’t decide what
to fix for dinner. Creole cookery reflects the
full-flavored combination of the best of French,
Spanish and African cuisines.
1 4-ounce can sliced
mushrooms, drained,
reserving liquid
Oil
1/4cup chopped onion
1/4cup chopped
green bell pepper
1 tablespoon cornstarch
1/2cup Heinz
Tomato Ketchup
1/8teaspoon
hot pepper sauce
1 9-ounce can tuna, drained
Hot cooked rice
1. Add water to reserved mushroom liquid to
measure 1 cup.
2. Heat oil in a small saucepan over medium-
high heat; cook mushrooms, onion and bell
pepper until tender-crisp.
3. Dissolve cornstarch in reserved mushroom-
water; stir in ketchup and hot sauce; add
to vegetables.
4. Cook over medium heat, stirring, until
thickened. Gently stir in tuna until heated
through. Serve over rice. Makes 3 servings.
