has been
credited with the word
canada
, meaning
village or community. Today, Canada is
a very large, diverse “village” stretching over 10
provinces and three territories. Likewise, its cuisine
is full of diversity, encompassing the specialties of
numerous First Nation tribes and those of immigrants
from around the world.
To the far west on the Pacific coast lies British
Columbia, a region full of food experimentation and
a cuisine that fuses the cooking techniques of First
Nation tribes and Europeans with Asian flavorings
and local ingredients. Salmon, black cod, halibut,
grapes, huckleberries, hothouse tomatoes, hazelnuts,
potatoes, mushrooms, wild game and wines high-
light the menu.
The heartland prairie provinces of Alberta,
Saskatchewan and Manitoba are rich in pioneering
history. Settlers created hearty, portable dishes
that are still popular today: roasted meats, steamed
puddings, berry jams, cabbage rolls, borscht (beet
soup) and sausages. Wild rice, mushrooms, freshwater
fish and game such as bison and rabbit are abundant,
as are root vegetables, grains and berries.
