Greens with Curry Vinaigrette
Earthbound Farm brings fresh, delicious

This crunchy and delicious salad will charm
your taste buds with its spicy simplicity.
2 tablespoons red
wine vinegar
1/2cup olive oil
1 tablespoon
Dijon-style mustard
4 teaspoons curry powder
1/4teaspoon salt
8 ounces Earthbound Farm*
Organic Mixed Baby Greens
1/2cup whole pecans,
toasted and chopped
1/3cup raw pumpkin
seeds, toasted
1 Gala apple, diced
1/3cup raisins
1. Combine vinegar, oil, mustard, curry powder
and salt in a jar and shake vigorously to combine.
2. Place greens in a bowl with pecans, pumpkin
seeds, apple and raisins. Add about half of
the dressing and toss thoroughly. Add more
vinaigrette if needed. Makes 6-8 servings.

Romano Caesar Salad
1/4 cup extra-virgin olive oil 3-4 anchovies, chopped
4garliccloves,divided 1headromainelettuce,
2tablespoons torninsmallpieces
Worcestershire sauce 1 cup croutons
1teaspooncapers Crackedpepper
1/4teaspoondrymustard 1/3cupgratedCelloGenuine
Juiceof1/2largelemon PecorinoRomano
1. Place olive oil, 2 garlic cloves, Worcestershire
sauce, capers, mustard and lemon juice in a
blender or food processor. Pulse a few times to
puree ingredients.
2. Rub the inside of a large bowl with anchovies
and the remaining garlic cloves.
3. Add lettuce and croutons to the bowl and toss
with salad dressing. Season to taste with pepper
and sprinkle with Pecorino Romano.
Makes 4 servings.
