Artisan Breads
Tom Fox of Costco’s Fresh Foods department has
this to say about the quality and preparation of Kirkland
Signature Artisan Bread:
Each loaf begins with the simple ingredients
of flour, water, salt and a touch of leavening.
To create its distinctive line of breads,
Artisan adds ingredients such as
potatoes, walnuts, pecans, raisins,
garlic, olives and herbs.
The distinctive flavor of the
bread also comes out through
the slow fermentation process,
much like wine that is aged in an
oak barrel. After the dough has risen,
it is divided and molded. Then each loaf
is hand scored and loaded into a hearth
oven, where steam and high temperatures
produce a loaf of bread with a crispy crust and a
light and chewy center.
In the Pacific Northwest and the Bay Area, the
varieties of bread include potato rosemary, pugliese,
garlic and demi baguettes. In the Los Angeles and
San Diego regions, members will find roasted garlic,
pain rustique and rosemary olive bread along with
sourdough and French baguettes. Pan bigio, roasted
garlic and multigrain bread are available in all other
regions, along with French baguettes.
Kirkland Signature Artisan Bread is best stored at
room temperature. If you serve one loaf immediately
and want to save the other for later, wrap the second
loaf in plastic and pop it in the freezer. To refresh
the loaf after freezing, let it thaw and then heat it at
425°F for three to five minutes, or until it reaches
the desired crispness.
