Greens with Cherry Vinaigrette
PRIMAVERA
2 tablespoons butter CHERRY VINAIGRETTE
2 tablespoons sugar 1/4 cup chopped fresh parsley
1/2 cup walnuts 1 tablespoon minced shallot
4 cups fresh spring greens 1/2 tablespoon honey
1/4 cup thinly sliced red onion 1/2 teaspoon ground white pepper
3/4 cup cubed Crystal Market 2 tablespoons white wine
Granny Smith apple (sweet or dry)
1 cup Prima Frutta fresh cherries, 3/4 cup white balsamic vinegar
pitted and halved 1/2 cup Prima Frutta fresh
cherries, pitted, diced, juiced
and strained (discard skins)
1 cup olive oil
1. Prepare Cherry Vinaigrette: Combine parsley, shallot, honey, pepper,
wine, vinegar and cherry juice. Slowly whisk in olive oil. Cover and
refrigerate overnight.
2. Melt butter and sugar in a small saucepan over medium heat. Toss in
walnuts and cook until coated and slightly darkened. Set aside.
3. Place greens in a salad bowl and toss with 1/2 cup vinaigrette until lightly
coated. Add onion, apples, cherries and walnuts. Makes 4 servings.
