Broccoli with Maple-Sesame Dressing
3 tablespoons maple syrup
2 tablespoons rice vinegar
1 tablespoon toasted sesame seeds
1 teaspoon chopped fresh cilantro
1/4 teaspoon ground cumin
Salt and pepper
2 tablespoons olive oil
1 tablespoon Asian sesame oil
3 cups Eat Smart broccoli cut into bite-size pieces
1 cup sweet onion cut into wedges
1 cup red bell pepper cut into wedges
1. In a small bowl, combine maple syrup, rice vinegar, sesame seeds, cilantro,
cumin, and salt and pepper to taste. Set aside to let flavors blend.
2. Heat olive oil and sesame oil in a large frying pan over medium heat.
Add broccoli, onion and bell pepper; cook until crisp-tender.
3. Place vegetables in a serving dish. Drizzle with dressing.
