Easy Mango Sorbet

1 32-ounce package Ready Pac fresh mango
1 1/2 cups hot water
1 cup sugar
1/2 teaspoon lemon juice
1. Place mango in a food processor and puree.
2. Combine water, sugar and lemon juice in a saucepan over low heat.
Stir until sugar is dissolved completely. Do not boil.
3. In a bowl, stir together mango puree and sugar mixture. Pour into
a freezer-safe plastic bowl or an ice cream maker and put in the freezer for
1 hour, or until the mixture firms and looks fluffy. Makes 6-8 servings.

Stuffed Medjool Dates
SUNDATE
4 ounces cream cheese or mascarpone, softened
1 tablespoon granulated sugar
1 teaspoon vanilla extract
1 tablespoon orange juice
Grated orange peel
16 SunDate Medjool dates
Ground cinnamon or nutmeg
1. Combine cream cheese, sugar, vanilla, orange juice and grated orange
peel to taste. Blend well until smooth.
2. Cut and remove the pits from dates.
3. Spoon or pipe the filling into the dates. Sprinkle with a very light dusting
of cinnamon or nutmeg. Makes 4-8 servings.
Variations: Other stuffing options are plain cream cheese, chopped
walnuts, almonds or other nuts, and nut butters.
