Blueberry Pecan Cluster Muffins
NEWMAN’S OWN/KERRY
1 cup boiling water
2 1/2 teaspoons baking soda
3 cups Kirkland Signature/Newman’s Own Wild Blueberry
Pecan Cluster Cereal
2 cups buttermilk
1/2 cup shortening
1 cup sugar
2 eggs
2 1/2 cups flour
1/2 teaspoon salt
1. Preheat oven to 375°F.
2. Mix boiling water and baking soda; let cool.
3. Pour cereal into a large bowl. Add buttermilk and let stand
for 10 minutes.
4. Cream shortening and sugar. Beat in eggs one at a time.
5. Sift together flour and salt. Add to creamed mixture alternately
with cooled water/soda mixture. Stir in cereal mixture.
6. Grease muffin pans. Scoop batter into muffin cups. Bake for
20-30 minutes, or until golden brown. Makes 24 muffins.
Tip: Muffin mix will keep in the refrigerator for 1 week
in a covered container.
Blueberry Pecan Cluster
Breakfast Parfait
NEWMAN’S OWN/KERRY
2 8-ounce cups of your favorite yogurt
1 1/2 cups Kirkland Signature/Newman’s Own Wild Blueberry
Pecan Cluster Cereal
1 ripe banana, sliced
2 teaspoons honey (optional)
1/2 teaspoon ground cinnamon (optional)
1. Use 2 wine goblets or clear glass bowls.
2. Place a layer of yogurt in each goblet, then a layer of cereal and a layer
of banana. Continue layering, ending with cereal on top.
3. Top with a drizzle of honey and a sprinkle of cinnamon for a delicious
start to your day. Makes 2 servings.
Tip: Kids love this great-looking combination. Remember, breakfast
is the most important meal of the day.
