8 tablespoons butter
Salt and pepper
1 cup hot milk
Cheddar cheese, shredded
Parsley, chopped
Preheat oven to 400°F. Wash and gently
scrub potatoes with brush. Bake 45-60
minutes, or until tender. Cut off top third
of each potato, scoop out insides and mash.

milk. Beat until fluffy. Fill shells with
mashed potatoes and top with cheese and
parsley. Reduce oven to 375°F and bake
12-15 minutes. Makes 8 servings.
Mott’s Apple Sauce Scalloped Potatoes
Here’s another way to serve potatoes, this time
by adding apple sauce and Cheddar cheese.
1 tablespoon butter
2 tablespoons flour
3/4 cup skim milk
1 cup Mott’s Apple Sauce
11/2 cups (about 4 ounces) grated
extra-sharp Cheddar cheese
11 teaspoon salt
1/2 teaspoon ground black pepper
1 pound (about 4 medium) baking potatoes,
peeled, cut into 1/8-inch rounds
1/4 cup Italian-style bread crumbs
Preheat oven to 350°F. In saucepan, melt butter
over low heat and whisk in flour. Continue
whisking 2 minutes and then add milk and
applesauce. Whisking, bring sauce to boil and
simmer until thickened, about 3 minutes. Remove from
heat and add cheese, salt and pepper, stirring until melted.
In greased 8-by-8-inch baking dish, add potatoes and sauce
in alternating layers, beginning with potatoes. Sprinkle
with bread crumbs and bake, uncovered, until potatoes
are tender and top is golden brown, about 1 hour.
Makes 8 servings.
