Nancy Stanton’s Costco-Coded Supper Dish Translated
12-15 small red-skinned potatoes
1/3 cup or more olive oil
11 tablespoon butter
2 large onions, chopped
11 each yellow, orange and red pepper,
seeded and chopped
1/4 cup steak seasoning blend
Dash of cracked pure black pepper
11 large bag spinach
11 cup crumbled blue cheese, or to taste
1/4 cup pine nuts
11. Place potatoes in boiling water and cook until just getting soft.
Drain and return to burner until all water evaporates.
2. Heat a large skillet and add 3 tablespoons olive oil and butter.
Add chopped onion and peppers to skillet and season with steak
seasoning and pepper. Sauté, adding more olive oil if necessary.
Cook 5-7 minutes.
3. Toss in 6 handfuls of spinach. Keep turning, adding a little
more olive oil if sticking occurs.
4. Halve potatoes and add to the skillet—make room for them
by sliding spinach mixture out of the way—so that potatoes
touch the bottom of the pan and are seasoned with olive oil
and bits from pan.
5. Now mix everything together in the pan. Add blue cheese to
your liking. Leave on stove, covered, and the cheese will just melt
into the mixture.
