Christie Meacham’s Carrot Salad
What could be better on this traditional orange-and-black day
than a yummy, colorful carrot salad? We thank this Oakland,
Oregon, Costco member for taking the time to share it with us.
6 cups grated raw carrots
1/4 cup packed brown sugar
1 teaspoon salt
1 tablespoon real apple cider vinegar
1/2 cup finely chopped onion
1 large green pepper, cored, seeded and finely chopped
1/2-1 teaspoon ground pepper
1 jalapeño pepper, seeded and finely chopped (optional)
1 cup mayonnaise
1 clove garlic, minced
1. Mix all ingredients and refrigerate overnight for best flavor.
2. You also can add 1/2 cup grated broccoli, 1/2 cup small
apple cubes, 1/2 cup raisins, or 1/2 cup pineapple chunks or
crushed pineapple (drained). Makes 10-12 servings.

rearrange them on their
own handsome plates to
serve for parties. Who
can blame them? Not us.

Deli. While most Costco
warehouses have basic
party platters that are made
fresh daily and that are available in the cooler cases, the
only way to guarantee a party
platter is to order it at least
48 hours in advance.

Erika Feuer’s Gardenburger Meatballs
“This is my recipe for vegetarian meatballs,” writes this
member from Cerritos, California. “They are good in a
spaghetti sauce, as a snack, with a dip or for juggling.”
Initially we thought juggling was a little extreme, but then
we’ve heard of stranger things happening on Halloween.
6 frozen Gardenburgers
1/4 cup flour
1/2 cup egg substitute or two eggs, beaten
2 teaspoons spice of your choice
Preheat oven to 400°F. Defrost Gardenburgers for 2
minutes on high in microwave. Mix all ingredients (easiest
done by hand). Form 30 meatballs. Place on greased cookie
sheet. Bake 20 minutes. Serve with your favorite barbecue
sauce. Makes 30 meatballs.
