3 cups halved cherry tomatoes
1 cup finely chopped green onions
1 cup thinly sliced fresh basil
2/3 cup fat-free Caesar dressing
1 cup chopped fresh parsley
8 ounces crumbled feta cheese
2 garlic cloves, minced
Combine ingredients in a large serving bowl. Toss well

Van Diermen Vanilla Cream Puffs
with Caramel Sauce
You choose: four hours in the kitchen making your
own cream puffs or 30 minutes thawing out Van
Diermen’s* glorious domes of pastry and cream.
Drizzle this caramel sauce over 24 cream puffs.
11/2 cups sugar
1/2 cup water
3/4 cup light corn syrup
Pinch of salt
1 cup heavy cream
1 teaspoon vanilla extract
In a heavy saucepan simmer sugar, water, corn syrup
and salt, stirring until sugar is dissolved. Boil over
medium-high heat without stirring until mixture is
caramel-colored (320-338°F). Remove from heat
and add cream and vanilla, stirring until combined,
about 1 minute. Cool to room temperature (sauce
will thicken). Makes about 11/2 cups.
