Royale Spinach Salad
The combination of protein-rich bacon and spinach, a
good source of iron and vitamins A and C, might be
just the power boost needed during the hectic holidays.
1/2 cup sugar
11 cup safflower oil
11 teaspoon dry mustard
11 teaspoon salt
1/2 cup vinegar
11 teaspoon celery seed
4 generous bunches spinach, washed,
drained, stems removed

12 slices Royale bacon, cut in 2-inch pieces
and fried until crisp*

Jalapeño Soup with Lime Cream
This Scottsdale, Arizona, member wrote that her soup
is absolutely delicious, very Southwest and tasty, and we
have to agree. It is all of the above and scored a perfect
10 from our Costco testers.
Combine sugar, oil, mustard and salt. Add vinegar and
celery seed; shake or beat well. Chill. Combine spinach,
onions, bacon and walnuts. Pour chilled dressing to taste
over salad and toss until well coated. Arrange tomatoes

4 tablespoons unsalted butter

8 cups chicken stock
3-4 fresh jalapeño peppers, seeded and minced, or to taste
1 pinch salt, or to taste
11 cup sour cream
2 teaspoons ground black pepper
8 sprigs cilantro
LIME CREAM
4 limes
11. Cook sweet potatoes, whole and unpeeled, covered
in salted water, about 1 hour, or until tender. Drain, cool
and peel.
2. Prepare lime cream: Stir the juice and grated peel of
limes into sour cream to attain a pourable consistency.
Refrigerate until ready to use.
3. In small skillet, sauté onion in butter until soft. Purée
potatoes, onion and 1 cup of stock in a blender or food
processor, adding more stock if necessary.
4. Place in a saucepan. Add remaining stock, jalapeños
and salt and pepper. Cover and simmer over low heat
about 30 minutes, stirring occasionally.
5. Ladle into bowls. Swirl a spoonful of the lime cream into
each bowl. Garnish with cilantro. Makes 8 servings.
