Dole Orange-Asparagus Salad
with Raspberry Vinaigrette

1 pound extra-large or jumbo Dole Fresh Asparagus,
trimmed and cut into 1-inch pieces
1 package ( 5-12 ounces) Dole Spring Mix,
European Salad Blends, or any other variety
1/2 cup thinly sliced red onion
11 15-ounce can Dole Mandarin Oranges, drained
1/2 cup bottled raspberry dressing
11. Steam asparagus 4-6 minutes, or until crisp-tender.
Rinse in cool water; drain well and set aside.
2. In a large serving bowl, combine salad blend, asparagus,
onion and mandarin oranges. Pour dressing over salad and
toss to evenly coat. Serve immediately. Makes 6 servings.

Warm Spinach Salad
Here’s a warm salad for
a cold night.
8 slices bacon
4 teaspoons sugar
1/4 cup cider vinegar
1/4 cup water
11 teaspoon salt
2 pounds Boskovich Farms

11 cup restaurant-style croutons
Place bacon in a large, deep
skillet and cook until brown.
Crumble and set aside. Pour
off all but 2 tablespoons of
bacon fat from skillet. Stir
in sugar, vinegar, water and
salt. Pour warm dressing and
bacon over spinach and toss.
Top with croutons. Serve
warm. Makes 6-8 servings.
