Shirley Kirchner’s Sweet Potato Fries
This Lititz, Pennsylvania, member writes, “I could give you
so many recipes, as I buy as much as possible from Costco.”
Our judges raved about Shirley’s sweet potato fries. They
are sure to liven up your cinco de mayo feast.
1. Preheat oven to 450°F.
2. Start by using 8-10 Costco Louisiana
yams. Use one per person. Peel the
potatoes and cut into french fry
shapes. Place in a 1-gallon resealable
plastic bag.
3. Add any herb you desire. Add chopped fresh garlic
( 2 cloves), grated Parmesan cheese (1/2-1 cup) and olive
oil (1/2 cup). Season with salt and pepper. Shake the bag.
4. Place potatoes on a cookie sheet. Bake for approximately
25 minutes, or until soft inside and a little crisp on the
outside. Makes 8-10 servings.
Prime Time Stuffed Peppers
8 Prime Time bell peppers
(red, yellow, orange or green)*
11/4 teaspoons salt, divided
11 teaspoon ground black pepper
3 cups cooked rice
11 15-ounce can black beans, drained and rinsed
1 11-ounce can corn, drained
11 medium onion, peeled and chopped
11 cup chopped walnuts
11 4-ounce can diced green chiles
1/2 teaspoon smoke-flavor seasoning
1/2 teaspoon ground cumin
1/2 cup ( 2 ounces) shredded Monterey Jack cheese
(or Jalapeño Pepper Jack)
Preheat oven to 350°F. Cut thin slice from one side of peppers;
remove seeds and membranes; rinse. Cook peppers 5 minutes in
boiling water to cover. Drain. Season insides with 1 teaspoon of
the salt and the pepper. Combine rice, beans, corn, onion, walnuts, chiles, smoke-flavor seasoning, cumin and remaining salt in a
medium bowl. Spoon 1 cup rice mixture into each pepper. Stand
upright in 9-by-13-inch baking pan. Cover with foil and bake 20
minutes. Remove foil, sprinkle peppers with cheese and cook
another 5 minutes, or until cheese has melted. Makes 8 servings.
