Nestlé After Eight Truffles
These two desserts are not only brilliant, they
are real showstoppers. Need we say more?
2 ( 3. 5 ounces each) milk or dark chocolate
Perugina Bars, finely chopped
1 box ( 8. 81 ounces, 30 mints total)
Perugina After Eight Chocolate Mints*
1/2 cup whipping cream
11/2 cups finely chopped walnuts
or almonds, toasted, or cocoa
for coating truffles
Place chocolate and mints in medium bowl.
Heat cream to gentle boil in small saucepan.
Pour over chocolate mixture; let stand
1 minute. Stir until smooth. Cover bowl
and refrigerate 15-20 minutes, or until
slightly thickened. Drop chocolate mixture
by rounded teaspoonful onto baking sheet lined with waxed
paper. Refrigerate 10-15 minutes. Shape into balls; coat with
nuts or cocoa. Store in airtight container in refrigerator.
Makes about 36 truffles.

HARVEST DINNER
Nestlé Baci Soufflés
12 Perugina Baci
Hazelnut Candies*
4 ( 3. 5 ounces each) dark
or bittersweet chocolate
Perugina Bars, broken
into pieces
1/2 cup butter
4 large eggs, separated
3/8 cup hazelnut liqueur
1/2 cup granulated sugar
Confectioners’ sugar
Preheat oven to 400°F. Spray
12 6-ounce ramekins with
cooking spray; coat lightly with granulated sugar. Place
1 Baci candy in each ramekin. Melt chocolate and butter,
stirring until smooth. Stir in egg yolks and liqueur. Beat
egg whites until soft peaks form. Gradually beat in 1/2 cup
granulated sugar until stiff peaks form. Fold egg whites
into chocolate mixture. Divide batter among prepared
ramekins. Place on baking sheet. Bake on center oven rack
13-15 minutes, or until puffed and center still moves slightly.
Sprinkle with confectioners’ sugar; serve immediately.
Makes 12 individual servings.
Walkers Shortbread Parfait
How fun, not to mention convenient and stunning,
to offer this luscious dessert in crystal goblets on a silver
platter at the end of the meal.
16 ounces raspberries
16 ounces canned/jarred peach slices, chopped
2 teaspoons medium sherry (optional)
16 ounces Greek-style plain or vanilla yogurt
2 5.3-ounce packets Walkers Shortbread, coarsely crumbled
Two hours before serving, mix fruit with sherry, reserving
a few raspberries for garnish. In 8 crystal goblets, parfait
glasses or sundae dishes, arrange the fruit and yogurt
(reserving some for topping) in alternate layers with the
shortbread crumbs. Chill. Top with remaining yogurt
and raspberries. Makes 8 servings.
