Grimmway Two-Way Garden Party Dip
Given all the hearty fare at this party, this lighter dip is
an excellent idea. In fact, we liked the seasoning options
so much that we suggest you prepare both and put at
opposite ends of the table. Serve with Grimmway baby
carrots and tortilla chips.
1/2 pint light sour cream ( 50 percent less fat
and 1/3 fewer calories)
4 ounces (1/2 package) Neufchatel cheese (1/3 less fat), softened
1/4 cup finely shredded Grimmway carrots*
1/4 cup each finely chopped red bell pepper and green onion
Freshly grated peel of 1/2 lemon
2-3 tablespoons bottled salsa or
1 teaspoon dried
salad herb blend and 1/4 teaspoon garlic salt, or to taste
11. In a medium bowl, whisk together sour cream and
Neufchatel cheese until smooth.
2. Stir in vegetables and lemon peel.
3. Add either salsa or herb blend and garlic salt.

Cover and chill. Makes about 11/2 cups.

Wisconsin Potatoes Pesto Potato Salad
Alsum Produce, Anthony Farms, Russet Potato Exchange and
Wisconsin Potato and Vegetable Growers Association have
joined together to share one of their favorite potato salads. This
salad is particularly good for outdoor events because there is no
mayonnaise in the recipe. Nonetheless, keep it out of direct sun
and nestled in a bowl of ice, and refrigerate after 2 hours.
12 pounds Wisconsin russet potatoes*
1 cup minced green onions
2 ounces anchovy fillets, minced
2 teaspoons sugar
1 teaspoon salt
3/4 cup balsamic vinegar
1/2 cup vegetable oil
11/2 cups prepared pesto
4 cups sliced celery
1/2 cup minced fresh parsley
Cover potatoes with water in large saucepan. Bring to boil,
reduce heat and simmer, covered with lid tilted, 20-30 minutes,
or until tender. Drain potatoes and slice 1/2 inch thick. Combine
green onions, anchovies, sugar, salt, vinegar and oil in a small
bowl; mix well. Add pesto and blend well. Pour dressing over
warm potato slices; mix gently and cool to room temperature.
Add celery and parsley; mix gently. Serves a crowd!
