Martha Ruiz’s Quick Chicken Flautas
Friends and family of this Salida, California, member will
now know the trick behind her famous chicken flautas.
“I always purchase the rotisserie chicken, corn tortillas and
guacamole from Costco. First I cut up the chicken and
shred in smaller pieces. I have my oil already at 400°F on
the stove. I warm up the tortillas in the microwave and
then put the Costco shredded chicken in the tortillas and
roll them up and fry them about 1 minute, until brown on
both sides. Then I remove them and put them on a rack. I
add the guacamole and salsa and serve. This is everyone’s
favorite, and no one knows how I get my flautas to taste
the way they do. Thank you, Costco.”
Sara Bulow’s Costco Chicken Soup
“My husband loves to pick up one of your delicious rotisserie
chickens at least once a week,” says this Superior, Colorado,
member. “Our family of seven makes quick work of it, but I
don’t toss out the leftovers. The next day I put the leftovers
to work making a scrumptious chicken soup that leaves our
house smelling like Grandma’s.”
1 rotisserie chicken carcass
(include the drippings in the bottom of the pan)
4 cups water
1/2 onion, chopped
2 garlic cloves, quartered
15 baby carrots, sliced
2 stalks celery, sliced
1/2 cup rice or 1 cup noodles
Combine carcass, water, onion and garlic in pot and bring to a
boil. Cover and simmer 1 hour, or until the remaining chicken
falls from the bones. Strain. Return the meat to the soup. Add
carrots, celery and rice or noodles and simmer until tender.
Add salt or bouillon to taste. For a thicker soup, whisk in a
can of cream of chicken soup after all the other ingredients
are ready. Use the leftovers to create another soup.
