This Kirkland Signature Pauillac comes from the best
Bordeaux vineyards in the famed Pauillac region north of the
city of Bordeaux. Pauillac is famous for the Grand Cru Classe
wines of Chateau Lafite Rothschild, Chateau Latour and Chateau Mouton Rothschild. Pauillac is considered by
many the top appellation of Bordeaux with perfect soil and growing conditions. Almost all vineyard land, 2,566
acres, of Pauillac is owned by the Classified Growths. 2003 vintage had a very warm summer in Bordeaux. At
harvest the grapes were picked at extremely high sugar levels. The Kirkland Signature cabernet-based wine has
ripe fruit along with soft velvety tannins.
Due to the intense heat of 2003 the very ripe grapes for this Kirkland Signature Pauillac were predominately
handpicked. The grapes were de-stemmed to avoid any green vegetative
notes, crushed and fermented in large cuvees as the skins were
macerated in the juice to extract deep, dense color, and soft supple
tannins. The fermented wine was racked off the coarse lees and
matured in small French barrels for 16 to 18 months, bottled and
allowed to mature longer in cold cellar conditions until release.

The Kirkland Signature Pauillac 2003 has deep, dark purple-black
opaque shades, with a sweet bouquet of cedar box, tobacco leaf and
earth. The flavor profile concentrates on the black fruit character of
cassis and blackberry preserves with soft tannins from ripe fruit.
Beautiful to drink now due to intense fruit concentration, it will hold
