Winemaking
Our winemaking team determines the farming techniques, vineyard yields and proper time for harvest.
Each vintage is slightly different so adaptations will be made to produce the best possible product.
The fermentation is carried out in a temperature-controlled environment in a traditional manner, then
the wine is placed in both French and American oak barrels (60% new and 40% second-year-use
barrels) for a period of 12 months to complete the winemaking and aging process.
Vintage
The 2010 growing season was cool; however a late heat
spike delayed harvest, which allowed for further phenolic
ripening while maintaining lower sugar and alcohol levels.
The result was a concentrated, lower alcohol level wine.
