Curried Chicken Salad

5 ounces cooked chicken breast, shredded
or chopped (canned or fresh)
1 tablespoon reduced-fat mayonnaise
1 teaspoon curry powder
In a bowl, mash chicken. Gently mix with mayonnaise, curry powder and grapes.
To serve, scoop the chicken salad on top of the salad greens. Makes 1 serving.

Note: Grapes of any color can be used in these recipes.
½ cup sliced Delano Farms green
seedless grapes (see note)
3-4 cups salad greens, for serving
PB-Grape Breakfast Pocket
1 whole-grain pita bread, toasted
2 tablespoons natural peanut butter
Cut a slit in the pita to create a pocket.
Spread peanut butter on the inside of the pocket and stuff with the grapes.
Seal it up and bite in! Makes 1 serving.
